My 4 ingredient energy balls are finally making it on the blog! Now that we are doing Whole30 I am not able to eat these, but luckily the kids LOVE them. They eat them as midday snacks, dessert, and I will even pack one in GG’s lunch box.
I am no cook or baker, but I have enjoyed making sweets since I was little. My job was always brownie maker and cake maker and I didn’t mind one bit! These 4 ingredient energy balls are SO much easier than any box mix because you literally just put everything in a bowl, mix, and chill.
4 ingredient energy balls:
1 1/2 cups instant oats (you can also use gluten free)
1/2 cup peanut butter (I use cashew butter)
1/3 cup maple syrup (I would use less. They are a bit sweet)
1/3 cup semi sweet chocolate chips (Enjoy Life are the best IMO)
- Mix all ingredient in a large bowl and chill in the refrigerator for 30 minutes to 1 hour.
- Remove from refrigerator and grab about a tablespoon of mixture and roll into a ball. I like to wet my hands just a little bit. This really helps the mixture from sticking to your palms.
- Store in a sealed container for up to a week. They are so good they won’t last that long. Trust me!
Now please tell me why I decided to share this right when I started Whole30?!
Let me know if you end up trying them and what you think! We are planning a trip to Hot Springs, AR next month and these would make the perfect road trip snack for the kiddos. Oh! That is another thing they hold up really well. Like I mentioned before, I pack them in GG’s lunch and they are no longer cold by the time she has lunch but they are still delicious.
If y’all enjoy these quick easy food ideas let me know and I will keep them coming. I have a real delicious chicken salsa soup recipe that is low carb and only takes about 30 minutes start to finish!
